Goat Cheese Stuffed Mini-Peppers

1 – 1lb bag sweet mini-peppers
1 – 8 oz bag Caprine Supreme Garlic & Dill OR Plan goat cheese curd.
Olive Oil

Preheat oven to 350 degrees
Slice stem end from peppers and remove seeds
Stuff cheese curds into peppers, cutting curds to fit.  Arrange peppers side-by-side, open end up, in a medium-sized soufflĂ© dish or straight-sided oven-proof bowl.
(The peppers should be firmly packed together.)
Drizzle with olive oil.
Bake 20-30 minutes until peppers are a bit soft and cheese is browned.
Serves 4-6

Lamb in Coconut Curry Sauce:

2 Tbsp Coconut Oil
1 lb cubed Lamb Roast or Lamb Stew Meat
1 large Onion, chopped
1 Tbsp grated Ginger Root
3 Cloves of Garlic
2 tsp Curry Powder
1 tsp Salt
1/2 cup Broth
1 cup Coconut Milk

1. Melt the coconut oil in a large pot and brown the lamb meat in the coconut oil.  Remove the meat and set aside, leaving the fat in the pan.

2. Saute the onions on medium heat until they soften in the fat, about 10 minutes.  Then add the garlic, ginger, and curry powder and saute a few more minutes.  Add the carrots and continue to stir to coat them with the spice mixture.


3. Pour in the broth and scrape up any brown bits that are still stuck to the bottom of the pan from browning the meat.  Pour in the coconut milk and bring to a simmer.


4. Add the meat back in and simmer for 30 minutes.  Enjoy.

Tis' the season... "Paleo" APPLE CRANBERRY PIE!!!


This pie is gluten and grain-free, dairy-free, and sugar-free, but boy is it TASTY!!

We make a coconut crust by hand, and fill it with sliced apples, stevia, coconut oil, and our favorite fall spices.

Then, we top it with our grain-free and sugar-free granola.

YUMMMMMM!!!!!!

We serve it by the slice, or please feel free to order one for your holiday gathering or just because :)

What is a POKEY PEOPLE DINNER??

We are going to be launching a new idea... the "Pokey People Dinner".  This is our version of a support group.  We will provide an environment in which you can confidently eat food that is gluten-free, and in line with your dietary restrictions.

Whether this way of eating is new for you, or if you've been doing it for years, the Poke People Dinner is an opportunity to share recipes, tips, stories, recommendation, and anything else you like with like-minded people.  We will try to make as many versions of the meal available to you, so that you may customize it according to your specific needs.

The best part - beside the delicious food, of course - is that unlike many restaurants, you don't have to worry about if there will be something on the menu you can eat, whether your requests will make it to the kitchen, or the dreaded eye roll!

Please feel free to bring family and friends.  These dinners are a great opportunity to introduce them to the way you eat, and show them that, yes, you CAN eat plenty of delicious foods.
