Lamb in Coconut Curry Sauce:

2 Tbsp Coconut Oil
1 lb cubed Lamb Roast or Lamb Stew Meat
1 large Onion, chopped
1 Tbsp grated Ginger Root
3 Cloves of Garlic
2 tsp Curry Powder
1 tsp Salt
1/2 cup Broth
1 cup Coconut Milk

1. Melt the coconut oil in a large pot and brown the lamb meat in the coconut oil.  Remove the meat and set aside, leaving the fat in the pan.

2. Saute the onions on medium heat until they soften in the fat, about 10 minutes.  Then add the garlic, ginger, and curry powder and saute a few more minutes.  Add the carrots and continue to stir to coat them with the spice mixture.


3. Pour in the broth and scrape up any brown bits that are still stuck to the bottom of the pan from browning the meat.  Pour in the coconut milk and bring to a simmer.


4. Add the meat back in and simmer for 30 minutes.  Enjoy.
